Original Recipe: 13g pectin powder 7g cream of tartar 100g sugar 450g sugar 500g puree (apricot, raspberry, strawberry) 100g glucose Modified Recipe I used: In Metric: 16g pectin powder (Wasn’t sure how much natural pectin acai had) (didn’t use cream of tartar, because I didn’t have any) 100g sugar (mix with pectin) 450g sugar 500g fruit puree, (if you don’t use a high pectin fruit like apples or berries you’ll want to modify the amount of pectin) 100g Golden Syrup (add last) US Measurements .55 oz pectin powder 3.55 oz sugar (about 1/4 cup, maybe a little more) (mix with pectin) 15.85oz sugar (a little under 2 cups) 17.65 oz fruit puree (about 2 1/4 cups) 3.55oz Golden Syrup (about 1/4 cup, maybe a little more) (add last) Cook to 240F (takes about 17-20 min) Pour in a flat 1/4 sheet pan covered in greased parchment or industrial plastic wrap. Thanks to Oprah Winfrey millions of people are aware of the amazing Acai fruit! There is more information coming out all the time about how nutritional Acai is and why all of us should be using it. Let’s examine why Acai is the number one super food in the world right now.
I knew about this stunning purple berry before Oprah ever let the world know about it’s spectacular properties. I do a lot of research and I tried out different products to see which one’s were the most effective. One thing I learned is, not all Acai products are created equal and I’m sure you know that, but do you know which product is the most pure?

From all of my online studies, I’ve learned that Acai may be the most nutritious food in the world! The question is, why didn’t we know about this powerful superfood many years ago? I think Oprah Winfrey did a great service to humanity by letting millions of people know about the highly coveted Acai fruit, but it was the Internet that allowed many people to purchase this precious product.
Unfortunately, there were many unscrupulous companies, who deceptively sold this purple berry and scammed many hard-working people out of their money. I believe most of these companies are now nonexistent. The purple berry product that they make, does not contain fillers and binders! For hundreds of years, people in the regions surrounding the Amazon have enjoyed the acai berry as a part of their daily diet. However, it was until recently that the word spread about this amazing berry and the rest of the world started to get interested in it. So, what exactly is the acai berry and what can it do? Continue reading to learn more about this superfruit and why its so popular.
The acai berry is not a new food. In fact, it’s been growing wild for hundreds of years in the rainforests of Brazil and South America. The local tribes have long used this fruit as a major source of food, as well as other things. The pulp of the berry is used in food dishes and the large seeds in the center of the berry were used as jewelry. Even the branches of the acai palm trees were used as building materials.
The real value of the acai berry comes from the nutritional properties it contains. When the tribes ate the berries they were not aware of how many nutrients it contained, just that it tasted great and gave them extra energy throughout the day. Studies in the past decade have shown it to have a number of nutrients that help our bodies.
We all know how good antioxidants are supposed to be. Well, the acai berry has nearly 12 times the amount of antioxidants as red wine. One particular type of antioxidant, anthocyanins, are extremely important for keep free radicals in check. Free radicals are chemicals in our bodies that can break down healthy cells and cause illness.
So, why is the acai berry popular all of a sudden you ask? Well, it was until recently that the acai berry was able to be transported to areas outside of South America. This is due to the fact that the acai fruit spoils very quickly after harvesting, usually around 24 hours. But, thanks to new freeze drying and flash freezing preservation techniques, it is now easily exported to other countries and regions.
If you want to try acai berry, you can usually find it available it a number of different forms. One of the most popular choices is acai berry juice. The juice contains many nutrients and antioxidants and also taste very delicious. However, make sure you are getting real acai berry juice. Some companies water down their acai juice with useless fillers. Avoid these at all costs!
Now that you know all about the acai berry, you are probably dying to go out and try it. Well, you will pleased to know that you can find it in most health stores, grocery stores, and many online shops. Have fun trying the fruits of the Amazon!
